Green Bean Potato Parmesan Salad


  1. In a medium saucepan, cover the potatoes with water, add 1 tablespoon salt. Bring to a boil. Reduce heat, simmer 20-35 minutes until fork tender. Drain water, reserve potatoes.
  2. Fill a medium saucepan 3/4 full with water, add remaining salt and bring to a boil. Add the green beans, return to a boil. Reduce heat, simmer for 8 minutes until tender. Drain water, reserve with potatoes.            
  3. In a medium bowl, combine dressing ingredients.
  4. Toss dressing with reserved potatoes and green beans. Season to taste with salt and pepper.
  5. Add parmesan and serve.
