December 22, 2015 – Make fresh produce the centerpiece of your holiday table with these tips. Perfect for your veggie-loving guests and meat-eaters alike.
Hardiness makes this fruit (yes, eggplant is a fruit!) a favorite meat alternative. Not only does eggplant take perfectly to the grill for flavor, it looks beautiful, too.
- Cut eggplant into slices and sprinkle with salt on both sides. Place slices into colander over a bowl or sink and let drain for an hour. Rinse in cold water and squeeze out extra water with paper towels.
- Brush both sides of the eggplant with olive oil, sprinkle with pepper and place on grill at medium-high heat. Cook for 5-6 minutes, until browned. Flip and cook until browned on both sides.
Turn pasta into a colorful creation by substituting noodles with veggie ribbons. Use a vegetable peeler to peel zucchini, squash and carrots into long strips and top with your favorite tomato or pasta sauce. Check out our Veggie Ribbons recipe for more ideas.
You haven’t tasted stuffed peppers like this before! Olives and feta crumbles give this winter favorite a Mediterranean twist on a traditionally southwestern meal.
