Grilled Eggplant
Hardiness makes this fruit (yes, eggplant is a fruit!) a favorite meat alternative. Not only does eggplant take perfectly to the grill for flavor, it looks beautiful, too.

  • Cut eggplant into slices and sprinkle with salt on both sides. Place slices into colander over a bowl or sink and let drain for an hour. Rinse in cold water and squeeze out extra water with paper towels.
  • Brush both sides of the eggplant with olive oil, sprinkle with pepper and place on grill at medium-high heat. Cook for 5-6 minutes, until browned. Flip and cook until browned on both sides.
