August 22, 2014 – Jessica again, from All She Cooks! Back today to share another GREAT summer recipe! Loaded with nutrients, our Healthy Salmon Foil Packets are both easy to make and healthy to eat. Bite-size pieces of fingerling potatoes and broccoli tips are topped with a salmon fillet, and then seasoned with a tasty mixture of spices and lime juice. Bake these salmon and vegetable packets in the oven, or spice things up and throw them on the grill.
You’ll be amazed at how quickly this meal comes together. An easy dinner night means little prep work and even less clean up. Clean up is a breeze because you can even eat straight off of the foil packets, making Healthy Salmon Foil Packets a perfect meal for camping or grilling out at a picnic.
Foil packets are an easy way to cook salmon to perfection with a variety of vegetables, spices and herbs; which means that you no longer have to be afraid of overcooking fish. Enjoy this no-dish meal, save some dinner prep time, and relax with the family.
Total Time: 1 hour, 15 minutes
4 tsp. Carlini Pure Olive Oil
1 ½ pounds fingerling potatoes, cut in ¼-inch pieces
1 pound broccoli florets, cut into large pieces
16 oz. Sea Queen Wild Caught Salmon Fillets, frozen
1 lime, quartered
2 tsp. Stonemill Essentials Steak & Chop Seasoning
1 tsp. Stonemill Essentials Iodized Salt
1 tsp. Stonemill Essentials Ground Black Pepper
Preheat oven to 350°.
Cut four sheets of aluminum foil, each large enough to hold a salmon filet and about a cup of veggies. Drizzle 1 teaspoon olive oil over each sheet.
Divide fingerling potatoes among the four sheets of foil, top each with the broccoli and 1 salmon fillet.
Squeeze one lime quarter over each salmon fillet.
Season each packet with 1/2 teaspoon steak and chops seasoning, 1/4 teaspoon salt and 1/4 teaspoon pepper.
Seal each packet and place onto a baking pan. Bake for 50 minutes to an hour, or until the potatoes are fork tender.
