For an eggcelent substitute of Mom’s Egg Salad recipe, try tofu. Use your favorite recipe and swap the eggs for tofu. Prep tofu by following these steps:

  • Remove excess liquid from tofu and press between two sheet pans for about an hour.
  • Crumble tofu in medium sized bowl, mix together with ingredients and let sit in the refrigerator for at least an hour (yes it really is THAT simple!).

Tofu-Topped Pizza
Replace chicken with tofu in a BBQ-inspired pizza. Top a premade pizza crust, like Mama Cozzi’s Italian Pizza Crusts, with fixings to add a tangy twist. Dice tofu and soak in your favorite BBQ sauce, then evenly spread on pizza and bake for about ten minutes at 400 degrees.

Homemade Tofu Stir Fry with Vegetables and Rice

Vegan Stir-Fry
Cut tofu into planks, add to hot oil in a large pan, cook for 5 to 7 minutes per side, or until browned. Add tofu to your noodles, vegetables and stir-fry sauce for a flavorful, vegan stir-fry.

Tofu Ceviche
Dice tofu, celery, tomato, mango, onion and cilantro into small pieces and let marinate with a little lime juice, salt and pepper. The longer you let sit, the more flavor is infused. Serve with SimplyNature Blue Corn Tortilla Chips for a favorite alternative to a classic shrimp snack.

Ceviche doesn’t have high sugar mangoes in it ever. Unless tofu is made with NON GMO soybeans, never will be on my list of things to buy.

So happy to see tofu in my favorite store! Can anyone tell me how long it will be on the shelves? The box I bought said it s good until September. On my next trip, I will stock up if it won’t be there long.

Haven’t seen tofu at my Aldi, but I have to say that we are obsessed with the chicken-less chick patties and nuggets. Please make them a regularly-stocked item!!! We love Aldi and I would be grateful for more vegetarian items like these.

I used the silken tofu and Aldi’s dried cherries to make a chocolate cherry mousse pie and even used an Aldi graham cracker crust. Everyone loved it. I eat tofu a lot since I started eating a plant based diet and it would be great to get tofu at Aldi’s, instead of going to 2 grocery stores 🙂
