Blistered Mini Peppers

1 pound mini sweet peppers
1 teaspoon Carlini Extra Virgin Olive Oil
¼ teaspoon Stonemill Iodized Salt
4 ounces Happy Farms Light Garlic and Herb Spreadable Cheese Wedges
25 Savoritz Sea Salt Pita Crackers
Preheat oven to 425°F.
Place peppers on a sheet tray and drizzle with oil. Season with salt and place in oven for 25 minutes or until skin is blistered; rotate after 10 minutes.
Spread cheese wedges on crackers and top with peppers.
