1 cup Specially Selected Unsalted Deluxe Whole Cashews

1 cup warm water

2 tablespoons lemon juice, fresh squeezed

1 clove garlic

Stonemill Sea Salt Grinder, to taste

Stonemill Ground Black Pepper, to taste

6 cups SimplyNature Organic Kale, finely chopped

2 teaspoons SimplyNature Organic Extra Virgin Olive Oil

1 teaspoon SimplyNature Organic Apple Cider Vinegar

2 large organic apples, diced

1 small red onion, thinly sliced

1 large, ripe avocado, peeled, pitted and diced

2 tablespoons Southern Grove Whole Almonds

2 tablespoons finely chopped fresh basil

1 teaspoon lemon zest, for garnish


  1. In a medium bowl, place the cashews with the warm water and soak the cashews for 2 hours. Drain the water and rinse the cashews. Add the cashews to a food processor with the lemon juice, garlic, sea salt and pepper; puree until smooth. Add a few tablespoons of warm water if needed for a thinner consistency.

  2. In a large bowl, combine the kale and oil; massage the kale using your hands until the kale leaves are soft and dark green. Add the apple cider vinegar, apples, avocado and almonds; toss to combine. Drizzle with the cashew dressing and serve immediately. Season to taste with sea salt and pepper, if desired. Garnish with lemon zest and fresh basil.
