Easy Ice Cream Pies

August 5, 2016 – Hey ALDI Fans! Emily Caruso of Jelly Toast blog here. I’ve been cooking up yummy summer eats all summer like Avocado Citrus Salad, Tropical BBQ Chicken Skewers, Homemade Hot Dog Toppings and today I’m beating the heat with Easy Ice Cream Pies!

ALDI knows that we are all trying to deal with this crazy heat and has Belmont Ice Cream on sale all summer (can I get a high-five for that?!). The kids and I went and picked up several flavors (because I can never buy just one container of ice cream) as well as some other favorite ALDI ingredients for layering such as Benton’s Speculoos cookies, Clancy’s Pretzel Sticks, and some fresh strawberries.

Prepare to melt….

Strawberry Ice Cream PiEasy_Ice_Cream_Pies_(4_of_11)[1]e
Yields: 8-10
Prep Time: 10 minutes
Freeze Time: 30 minutes
Total Time: 40 minutes

Ingredients:
1 Bakers Corner Graham Cracker Crumb Crust
1 quart Belmont Premium Ice Cream, Real Strawberry, divided
1 cup sliced strawberries

Directions:

  1. Allow ice cream to sit at room temp for about 5 minutes to soften, but not melt.
  2. Spread half of the ice cream in the bottom of the graham cracker crumb crust. Top with half of the sliced strawberries. Repeat with remaining ingredients.
  3. Cover with plastic wrap and freeze for 30 minutes or until firm. Slice and enjoy!

Easy_Ice_Cream_Pies_(5_of_11)[1]Salted Caramel Pretzel Ice Cream Pie 
Yields: 8-10
Prep Time: 10 minutes
Freeze Time: 30 minutes
Total Time: 40 minutes

Ingredients:
1 Bakers Corner Graham Cracker Crumb Crust
1 quart Belmont Light Ice Cream, Sea Salt Caramel, divided
1 cup Clancy’s Pretzel Sticks, crushed
1/2 cup Berryhill Caramel Topping, warmed and divided

Directions:

  1. Allow ice cream to sit at room temp for about 5 minutes to soften, but not melt.
  2. Spread half of the ice cream in the bottom of the graham cracker crumb crust. Top ice cream with half of the crushed pretzels and caramel topping. Repeat layering with remaining ice cream, pretzels and caramel topping.
  3. Cover with plastic wrap and freeze for 30 minutes or until firm. Slice and enjoy!

Easy_Ice_Cream_Pies_(7_of_11)[1]Cookie Lovers Ice Cream Pie
Yields: 8-10
Prep Time: 10 minutes
Freeze Time: 30 minutes
Total Time: 40 minutes

Ingredients:
1 Bakers Corner Graham Cracker Crumb Crust
1 quart Belmont Premium Ice Cream, Chocolate Chip Cookie Dough, divided
6 Bentons Speculoos Cookies, crushed, divided
1/2 cup Berryhill Hot Fudge Topping, divided

Directions:

  • Allow ice cream to sit at room temp for about 5 minutes to soften, but not melt.
  • Spread half of the ice cream in the bottom of the graham cracker crumb crust. Sprinkle ice cream with half of the cookie crumbs and drizzle with half of the hot fudge sauce. Repeat layering with remaining ice cream, cookies and hot fudge sauce.
  • Cover with plastic wrap and freeze for 30 minutes or until firm. Slice and enjoy!
