Bruschetta, Three Ways

June 4, 2014 – Bruschetta (pronounced bruh-sketta), traditionally an Italian appetizer, combines diced tomatoes, raw onions and fresh basil piled high on grilled bread, and sprinkled with olive oil, salt and pepper. While we love the traditional dish, a few experiments in the ALDI Test Kitchen led to some unexpected and equally tasty bruschetta-like starters for you to try at home.

Zucchini Bruschetta

Skip the traditional toasty bread and opt for making your own breaded zucchini as the base. Top with tomatoes, onion, mozzarella, olive oil and fresh basil and serve warm. The breaded zucchini is even yummy enough to eat on its own!

Lemon Fruit Bruschetta

Start with a combination of homemade lemon cream cheese spread and fresh cut fruit atop grilled baguette slices. Then drizzle with honey, and you’ve got yourself a fruity bruschetta masterpiece.

Sweet Strawberry Bruschetta

Try this sweet version for a fresh, light dessert. Start with light-as-air angel food cake* and top with sweet Neufchâtel, bright strawberries and mint.
