October 7, 2015 – A stocked repertoire of go-to recipes makes for seamless meal prep during the school year. Prepping meals that are quick, nutritious, budget-friendly and appealing to the whole family isn’t always easy, though.
That’s why we partnered with Food & Culinary Professionals to help you take the guesswork out of meal prep! Based on creativity, healthfulness, simplicity, ease, appearance and taste, we selected a few recipes as our gold-star favorites. Chicken Fiesta Soup was our GRAND PRIZE winner! Chicken Fiesta Soup
Prep Time: 5 minutes
Cook Time: 6 hours
Equipment and Utensils
Crock Pot, rubber spatula, forks, ladle
2 4oz Chicken Breasts
4 cans 10.5 oz. Chef’s Cupboard Cream of Chicken Soup
1 can 15.25 oz. Happy Harvest Whole Kernel Sweet Corn, with juice
1 can 10 oz. Casa Mamita Diced Tomato & Green Chiles, with juice
1 can 15.5 oz. Dakota’s Pride Black Beans, well rinsed and drained
Dash of salt and pepper
Combine all ingredients into a crockpot, including juice from corn and tomatoes. Stir. Set on Low for 6 hours. Using two forks, shred the chicken when finished cooking. Enjoy
For a more authentic Mexican flavor, try adding 2 teaspoons of cumin before cooking and serve with shredded cheese and tortilla chips.
