Take Five Pasta
4 (~3 cup) portions

Equipment and Utensils
1 large 5 Quart Pasta Pot
1 Pasta Ladle
1 large Skillet
1 large Spatula or Cooking Spoon
4 Pasta Bowls
1 16 oz. bag liveGfree Gluten Free 100% Corn Pasta Penne Rigate
1 pinch salt
1 28 oz. can SimplyNature Organic Diced Tomatoes, drained
3 oz. SimplyNature Organic Baby Spinach
4 oz. Reggano Parmesan Cheese, freshly shredded
2 tbsp. sugar, adjust as needed to taste
½ tsp. black pepper
Prepare pasta according to package directions (Bring 5 quarts of water to a rapid boil. Add a pinch of salt and pasta. Stir. Maintain a rapid boil 10-12 minutes. Drain pasta in a colander.) While the pasta is cooking, begin heating skillet over medium heat. Add diced tomatoes and stir with spatula or cooking spoon for 2-3 minutes. Add sugar and black pepper. Add baby spinach and heat just until wilted; another 1 to 2 minutes. Toss mixture with prepared pasta. Top with shredded Parmesan cheese and serve immediately.
To personalize this dish and match your family’s flavor preferences, try adding simple additions such as garlic and onions sautéed in olive oil, a sprinkle of oregano or basil , diced ham or pepperoni or olives and feta cheese.
